We met in our hometown of Townsville, where both our families still live. Six months into dating, we made the decision to move to Brisbane to further our careers. One of our favourite things to do as a couple, are day-trips and weekends away. We feel so lucky to be in Brisbane, so close to many incredible destinations. Many of which, is the Scenic Rim.

We love travelling. In 2018 we went on a family holiday to the USA for my Auntie’s 60th birthday. Little did I know it would turn into more than one reason to celebrate!
Josh let my family in on the proposal which made it all the more special. One of our destinations was New Orleans, Louisiana. My parents were staying at a beautiful hotel in the French Quarter, Maison Dupuy. The rooms were elegant with a stunning courtyard by a pool, water fountain and bar with jazz playing. After a big day of exploring, it was late. Josh suggested we walk to Maison Dupuy for a drink in the courtyard with my parents.
I did the whole ‘I’m tired’ ‘It was a big day’ ‘Can I just shower and go to bed’ ‘We’ll see them tomorrow’.
Josh pushed to go however, so I agreed. I should have known when Josh made a point of taking our professional DSLR camera. I recall asking why we needed to lug it down the road for a drink. Josh said ‘in case we see something really cool and want to capture it!’.
Skip to the hotel, and my Aunty suggested family photos, on a beautiful couch with a wall of candles lit behind us. Next thing I know Josh is down on one knee. We are all crying and photos are being taken of the moment. Dad had a bottle of champagne waiting to celebrate, and it was one of the most beautiful nights of our lives.
One of other favourite things is wine! So when it came time to decide on a venue, we agreed to get married somewhere that reflected us as a couple. Also allowed our guests to make a mini holiday out of the visit.
Kooroomba Vineyard & Lavender Farm was the third venue we looked at. We immediately fell in love. Incredible scenery, a gorgeous chapel, a vineyard and lavender farm. Combined with kind, warm service with the most delicious food and wine. We knew this was the place for us.
We met Executive Chef Daniel upon our first visit and got talking about local produce. Josh and I have a property in Brisbane, with two big olive trees and no idea how to harvest them! As I’m sure you know, Kooroomba sources local produce for their meals which we love. They also have an olive grove. Thanks to Daniel’s teachings that day, we successfully harvest our own olives at home now. We are also vegetarians and decided to have a totally vegetarian wedding, with hope our guests could try something new. Daniel, Sam & Asta were incredibly accommodating. It was no fuss at all to create a menu for us. Supporting small, local business is important to us – combined with the genuine care of the team, and it was a dream. We also had a fire pit and marshmallow station which was alot of fun.
The chapel at Kooroomba is an architectural masterpiece. Getting married in a church or chapel was an important decision for our wedding as we are both Catholic. We were most fortunate to have our family priest from Townsville Diocese, Father Dave Lancini, travel to Kooroomba to marry us.
If I could only use one word to sum up our wedding day, it would be ‘stunning’.
I don’t think I’ve heard ‘stunning’ used more in our total lifetime compared to our wedding day. We heard it verbally on the day, with guests referring to the venue, the weather and my dress. Messages and phone calls received in the days to follow ‘Your wedding was just stunning! As well as comments left for us on Facebook, when we shared photos of the big day.
The Line Up
As for all our other suppliers, we honestly cannot recommend them enough. They were all such a dream to work with!
How wonderful is Cas from Inc.mill Photography! She was an absolutely dream to work with. It honestly felt like one of our long-time family friends was with us to capture all of our incredible memories. Cas is such a kind and thoughtful person with a huge heart and great sense of humour. Of course we are in love with the photos from our day. I feel however the true reflection, is in the quality of Cas capturing the reactions of our family and friends. Our loved ones no only commented on how wonderful the photos were, but how wonderful Cas is. Everyone loved connecting with her on the day.
Accommodation – Herrmann House. Wow! We cannot wait to re-visit for our wedding anniversary. Flawless from start to finish.
Flowers – Kate, owner of TigerLily Flowers. One of the sweetest ladies I have met. All communication was via email, photo exchanges, etc. We hadn’t met face-to-face so I was thrilled when Kate arrived on the day and asked my bridesmaid if she could come in and say hello.
Hair & Make-up – Karina, owner of Forever Hair & Bridal. Karina is so talented, fun and the kind of woman you want present on the morning of your wedding day! Karina did my Hair & Makeup, as well as my three Bridesmaids and my Mum. It was flawless. Teamed with great conversation with fun music, how could you go wrong.
Cake – Natasha, owner of Simply Divine Occasions. Our wedding cake was a single-tier, blueberry and coconut cake with vanilla buttercream. Delicious!
Dress – Brides Desire by Wendy Sullivan. Beautiful service, and a wonderful experience shopping for my gown.
If we could give one piece of advice to couples planning their special day, it would be ‘don’t sweat the small things’. We were extremely blessed with our planning. Our day couldn’t have been more perfect. There were a few hiccups along the way (including my original wedding dress not arriving and having to shop off-the-rack 6 weeks before the big day, after 21 months of planning!)
The people and relationships in your life is what matters most. The hiccups just reminded us how lucky we are to have such caring and loving family and friends. And most importantly, each other.
Thank you, we are honoured that Scenic Rim Bride would love to feature our wedding! I am an avid reader of Scenic Rim Bride and adore the content on your Instagram page. It certainly played a role in the planning process of our wedding. Emily & Josh.
